  • 1 Cup Egg Whites
  • 1/4 Cup Diced Red Bell Pepper
  • 1/4 Cup Diced Green Bell Pepper
  • 1/4 Cup Chopped Spinach
  • 2 tbsp Chopped Onion
  • 1 Small Garlic Clove Minced
  • Salt and Pepper To Taste
  • 1/2 tbsp Olive Oil
  • Fresh Herbs for garnish Like Parsley or Chives

  • Heat a non-stick skillet over medium heat and add the olive oil.
  • Add the onions and garlic to the skillet, sautéing until they become translucent.
  • Add the bell peppers to the skillet, cooking for 2-3 minutes until they soften.
  • Add the spinach and cook until wilted.
  • Pour the egg whites into the skillet, stirring gently until they are cooked through, about 3-4 minutes.
  • Season with salt and pepper to taste.
  • Garnish with fresh herbs, and serve warm!
