Add the onions and garlic to the skillet, sautéing until they become translucent.
Add the bell peppers to the skillet, cooking for 2-3 minutes until they soften.
Add the spinach and cook until wilted.
Pour the egg whites into the skillet, stirring gently until they are cooked through, about 3-4 minutes.
Season with salt and pepper to taste.
Garnish with fresh herbs, and serve warm!
