
Lemon Herb Grilled Shrimp Skewers

Ingredients
- 1 lb raw large shrimp, peeled and deveined
- 2 tbsp olive oil
- Zest & juice of 1 lemon
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- Salt & pepper to taste
- Optional: chili flakes for heat
- Lemon wedges & extra herbs to garnish
- Optional veggie add-ons: cherry tomatoes, zucchini slices, red onion chunks
Instructions
- Marinate the shrimp: In a bowl, combine olive oil, lemon zest and juice, garlic, parsley, oregano, salt, and pepper. Toss in shrimp and let marinate for 20–30 minutes.
- Assemble the skewers: Thread shrimp onto metal or soaked wooden skewers. Alternate with veggies if using.
- Grill it up: Preheat grill to medium-high. Grill skewers for 2–3 minutes per side, until shrimp are opaque and slightly charred.
- Serve and savor: Plate with lemon wedges and a sprinkle of fresh herbs. Enjoy hot off the grill or chilled the next day over a salad.
